World's Easiest Meal Prep

Alrighty friends, it’s time to share one of the world’s EASIEST and MOST VERSATILE meal prep recipes. No more spending hours in the kitchen each Sunday to prep for the week. This delicious recipe takes literally minutes to prepare and can be tweaked with endless options for toppings to make sure you don’t get bored with it. It’s also low-carb and has a ton of protein so it’ll keep you full for longer. I present to you: Crock-Pot Salsa Chicken. With this recipe, we can all be the Emeril Lagasse of our kitchen. Let’s go!

CROCK-POT SALSA CHICKEN

INGREDIENTS

Only TWO ingredients are called for in this recipe. Grab these in seconds at your local grocery store and you’ll be ready to rock!

INSTRUCTIONS

  1. Place chicken in the crock-pot

  2. Pour your salsa all over the chicken. Use a spoon and mix up the salsa so that it is evenly covering all the chicken in your pot

  3. Cook, covered, on high for 4 hours. Feel free to Netflix & Chill, do some laundry, or take a nap while you wait!

  4. While you wait, clean and dice any veggies you wanted to add later. Set them aside in a separate bowl.

  5. Once the chicken has cooked, open your pot and use two forks to pull the chicken apart thoroughly. Once shredded, mix the contents of your pot so the salsa and chicken are well distributed.

  6. Use a large spoon or ladle to scoop out the chicken salsa mixture into bowls or containers

  7. Take your veggies and add an equal amount to the top of each bowl or container

  8. Let the food cool before you put them in your freezer or fridge to store for the week ahead

  9. When you’re ready to eat, add on some spinach, guacamole, or whatever you want to make the bowls extra tasty and unique!

NOTES / TIPS

  • You’ll need a crock-pot for this recipe. If you don’t own one yet, you absolutely should get one as it’s one of the best investments you can make for your kitchen.. they also only cost $20-30. For this recipe I used an 8 quart Crock-pot (aka slow cooker) which you can find on Amazon here

  • For storage, I’m a huge fan of Pyrex 4-cup round dishes. You can find them on Amazon here

  • The recipe above makes a whopping 12 servings which may be too much if you’re only prepping for yourself. Simply cut the ingredient amounts in half, follow the same steps, and you’ll get a nice 6 serving result instead.

  • I like to add some raw vegetables (onions, bell pepper, cucumber, spinach) on top of my bowls instead of cooking them in the pot. This helps them stay nice and crispy, maintains their strong taste, and also allows you to get the most nutritional value out of them.

    • On that note, if you are tracking calories, you may want to weigh the portions you create when making this recipe to make sure they are of equal size. NUTRITION

Each bowl has over a quarter pound of chicken meaning you’ll get a TON of protein. Each serving is just 270 calories with 14g carbs, 6g of fat, and 40g of protein. With calories so low, feel free to add on some delicious guacamole for some extra, nutritious fat (and flavor!).
